NIGHT HARVEST 2021 AND A FULL MOON TO CELEBRATE THE START OF THE HARVEST
Harvesting at night reveals our passion and concern not just for the wine but also for the environment.
The fact that the grapes arrive at a cool 10°C due to the cold breezes coming in from the Andes
Mountains means that we can do cold macerations without using energy to get them to the right
temperature. This allows us to gently extract the colour and aromas from the skins, which lends greater
complexity to our wines. Working with cooler grapes also means that the selection and crushing
processes work better and more eciently, thereby resulting in significant savings in energy and time.
The 2021 vintage has been marked by a cool summer, which has resulted in musts of pronounced color
and lively aromas that flirt elegantly with the vibrant, bold, but always well-balanced acidity. Fruity
and floral aromas combine with tense tannins that dance seductively and weightlessly in your mouth,
enveloping it, before transforming into a train of velvety tannins that stretch into an infinite line that
delivers an elegant finish.
